Ingredients
6 servings

1onion
large, finely chopped

2celery stick
finely chopped

3carrot
peeled and finely chopped

1courgette
large, finely chopped

3garlic clove
large, crushed

1 tspdried oregano

basil
or the dried stuff, its all good

sauce

tabasco sauce

black pepper

1 x 400gcan cannellini beans

1 x 400gtin beans
any, kidney, black eye anything you see on the shelves they all work

1 x 400gcan chopped tomatoes

3 Tbsptomato purée

1.2 litrevegetable stock

2bay leaves

140gpasta
small

2 handfulskale
chopped
Instructions
Step 1
• STEP 1 Chop everything (Minus the kale and pasta) and bung it in a pan making sure it is all reasonably small and try and keep everything a similar size.
Step 2
Empty the entire contents of all the tinned stuff into the pan too.
Step 3
Add the stock.
Step 4
Heat on the hob (would work in a slow cooker too)
Step 5
Bring to the simmer and cook for 30 mins.
Step 6
• Add the pasta and Kale, and cook for a further 10 mins or until the pasta is cooked.
Step 7
Scoff with bread…yummy
Step 8
Makes enough for 4 big servings or 6 regular servings , I chill in the fridge and reheat the next day or the day after. Tastes great the next day.
