Chicken, broccoli and cream cheese orzo

Instructions
Step 1
Preheat oven to 180 degrees

Step 2
Roast chicken in oven for 30 minutes in a tin foil parcel



Step 3

Pull chicken into strips using two forks


Step 4

Chop broccoli into small pieces and add to a pan of boiling water along with the orzo. Cook according to packet instructions (usually 12 minutes)





Step 5
Chop onions, mushrooms, garlic and sundried tomatoes






Step 6
Grate cheddar cheese
Step 7
Add oil and butter to pan and fry onions and mushrooms over a medium heat to soften
Step 8
Add garlic and fry for a further minute or so
Step 9
Add the chicken, cream cheese and sun dried tomatoes. Stir through so cream cheese is melted
Step 10
Drain the pasta and broccoli then add to the pan with the chicken etc.
Step 11
Use some of the pasta water (or just any water) to slacken a littke
Step 12
Add the cheddar cheese and stir until everything is warmed through
Step 13
Serve and season with salt and pepper
