When in Rwanda, you can't say you have had a meal until you taste Isombe. The meal originally came from DR Congo and eventually filtered through to Rwanda. Traditionally made of cassava leaves, this dish is enjoyed in many forms - this version uses a few different types of vegetables.

Step 1
Chop all the vegetables
Step 2
Meanwhile boil 6 cups of water with the beef stock cube and all condiments.
Step 3
Add cabbage and all the veggies except tomatoes when the water starts boiling.
Step 4
When water is almost drying out, add vegetable oil; let it cook until liquid is mostly absobed
Step 5
Add chopped tomatoes, simmer until almost dry.
