Ingredients
2 servings
1 Tbspolive oil
plus more for frying the parcels
0.5red onion
peeled and finely chopped
1 tspras el hanout spice mix
2 Tbspnuts
chopped, cashew, walnut, almonds etc
4dried apricots
finely chopped
3 sprigsfresh mint
chopped
veg
Finely chopped, like green beans or asparagus
dried cranberries
garlic
1 cuprice
cooked, flavoured, if liked
4flour tortillas
8 inch or bigger
Instructions
Step 1
Cook the rice until tender in stock
Step 2
Fry chopped onion in a little oil
Step 3
Add garlic, dried fruit, spices, veg etc to the cooked rice. Cook for a few minutes to blend. Allow to cool.
Step 4
Warm the tortillas to make easier to fold. Put a pile of the rice mix into the center of the tortilla and fold sides to the middle, bottom to middle then roll over to form a parcel.
Step 5
Heat oil (and a little butter if liked) in the frying pan and fry the parcels until golden and heated through. You can keep the parcels hot in a warm oven until ready to serve.
Step 6
Serve with veg or salad and a chunky fruit salsa (apple, pear, mango, cranberry, etc).
