Sweet n sour chicken

A family favorite!
Notes: Omit/reduce the cayenne for a milder version.
I make a double batch in a 13x9 and fit as much chicken as I can, ~3lb.
If the sauce is high enough, I skip the basting, or maybe do it once.
If using large chicken breasts, I slice them into 2 thinner pieces, and maybe cut those in half.
Since all the ingredients are shelf stable, I think it's safe to prepare the sauce several days in advance (except maybe the vinegar.)
I usually have leftover sauce. I have frozen it for later use and just added new chicken and cooked again. Worked out well!

Instructions
Step 1
Combine all ingredients except for the chicken in a 13x9 baking dish and mix well.
Step 2
Add chicken, pierce each side several times and coat well.
Step 3
Bake for 30 minutes, basting several times. Flip halfway. (If the sauce is high enough, basting can be skipped.)
Step 4
Serve over rice.
