Instructions

Step 1
Fry tofu, meanwhile slice carrots, zucchini, capsicum.
Step 2
Set tofu aside and fry zucchini, capsicum, carrots, and add curry paste, stirring to coat.
Step 3
Once curry paste is fragrant and cooked, add tofu back in, then add about half a can of coconut milk.
Step 4
Add half a cup hot water, plus the udon, soy sauce, and sugar. Stir to combine and cook until udon are heated through.
Step 5
Serve w it h coriander if avail, and wedge of lemon.
