Instructions

Step 1
Place a frying pan over a medium heat and add the oil. Once hot, add the onion and cook for 2-3 minutes until starting to soften.
Step 2
Add the garlic and ginger and cook for a further 2 minutes. Add the chopped tomatoes, spices, salt, coconut milk, water and lentils, and combine well. Bring to the boil, then reduce the heat to low and simmer for 25-30 minutes until the lentils are tender.
Step 3
Serve the dahl garnished with fresh coriander and a slice of lime, with 2 poppadoms per person.
