Instructions

Step 1
A) Slowly boil saffron in water and then allow it to cool after bringing to boil.
Step 2
B) From the ingredients above put from ingredient number 1 (Yoghurt) - 15 (Nutmeg) and vegetable oil in bowl and mix well till it's fine paste masala.
Step 3
C) Place washed and cleaned meat (16) into newly made paste and allow to marinade.
Step 4
D) Boil rice, with cardamom, salt and oil to 60% completion.
Step 5
E) In a clean pot, grease well with oil then line with foil and grease foil also, and then place marinated meat into the base of greased pot.
Step 6
F) Top with whole green chillies, coriander and mint leaves roughly chopped.
Step 7
G) Now cover all with a very thin layer of fried onions.
Step 8
H) Now gently place half of the semi boiled rice over the masala, chillies and fried onions.
Step 9
I) Sprinkle rice lightly with half of the saffron solution and place a thin layer of fried onions.
Step 10
J) Now place rest of rice, saffron solution and fried onions in same manner.
Step 11
K) Slice butter and layer on top.
Step 12
L) Cover with lid place on stove with full heat (flame should not come past the underside of the pot) until it starts to steam approximately 10/ 15 mins), then half flame for (20/25 mins), then very low flame for 30 mins.
Step 13
M) When meat is cooked and no water is left it's done.
