Instructions
Step 1
Bring a large pot of water to a boil.
Step 2
Add lasagna noodles and cook until slightly underdone (about 5-8 minutes).
Step 3
Drain and rinse.
Step 4
Mix together mozzarella, parmesan, ricotta, tofu, and spinach in a large mixing bowl.
Step 5
Lay a noodle flat.
Step 6
Spread a layer of cheese mixture across it.
Step 7
Then spread a layer of sauce on top of that.
Step 8
Roll the noodle up and place it in a baking dish (with the seam side down).
Step 9
Repeat this for all lasagna noodles.
Step 10
Drizzle extra sauce over the top and grate a little extra parmesan over as well.
Step 11
Bake for about 25 minutes at 350° F covered, uncover bake 10 more minutes, add shredded cheese, bake 5 minutes more.(until bubbling)
Step 12
Let stand 5 minutes. Serve.
