Instructions
Step 1
Preheat the oven to 180°C or 350°F.
Step 2
Line a baking tray with baking paper.
Step 3
Place the chopped carrot and sweet potato on the baking tray.
Step 4
Arrange chopped red onion and orange wedges around the vegetables and drizzle with 1 tbsp olive oil.
Step 5
Season generously with salt and roast in oven for 20-25 minutes.
Step 6
After 20-25 minutes, remove the pan from oven and spread over chickpeas and kale.
Step 7
Drizzle the remaining olive oil, sprinkle some cumin and season with salt.
Step 8
Return to oven for a further 15-20 minutes, or until the chickpeas are golden and kale is crispy.
Step 9
Remove the pan from oven, add the baby spinach leaves and dollop over tzatziki or coconut yogurt.
Step 10
Sprinkle with sesame seeds, chilli and a little more cumin, if desired.
