1. Dice onion and chop vegetable & tofu into bite sized pieces 2. Fry onion, garlic & ginger until onion is soft 3. Add tofu and fry until golden 4. Add vegetables and cover and cook until soft 5. Cook rice according to instructions 6. Add coconut milk & curry paste 7. Divide rice & curry & serve
