Step 1
In saucepan, saute onion in olive oil until onion is clear. Add sliced chicken, salt and pepper to taste. Dissolve curry sauce in 3 cups hot water and add to chicken. Add carrots. Cover and simmer for 15 minutes, stirring occasionally. Add broccoli in the last 5 minutes, if desired.
Step 2
Serve over rice.
