Instructions

Step 1
In a large skillet, add 2 tbsp oil over medium-high heat. Add onions and bell pepper and cook until fragrant and soft.
Step 2
Add chicken to skillet and cook until chicken is heated through.
Step 3
Add taco seasoning and enchilada sauce to skillet and stir to combine.
Step 4
Transfer contents of skillet to a bowl or aluminum pan. CAREFULLY wipe out the skillet with several paper towels. Place skillet back over medium high heat.
Step 5
Take a large flour tortilla and sprinkle 1/4 cup shredded cheese over half of it. Then spoon chicken mixture over cheese, then top with another 1/4 cup cheese. Fold tortilla over chickena and cheese mixture.
Step 6
Spray one side of the tortilla with cooking spray and place that side down on the preheated skillet. Cook for three minutes.
Step 7
Spray the other side of the tortilla with cooking spray, flip and cook for two more minutes, until the cheese is melted, the tortilla is browned and the edges are crisp.
