Black Bean Mole with Salsa (Speedy Bosh!)

100mlwater
0.5 x 100gchipotles in adobo

0.5orange
smoked salt
100gcherry tomatoes
2spring onions
0.5fresh red chilli

leaves and stems

Instructions
Step 1
Heavy-based saucepan on a medium heat Frying pan
Step 2
Start the mole - Add the oil to the hot saucepan Roughly dice the onion and add it to the pan along with the garlic and spices. Fry for 10 minutes, stirring from time to time. Drain the black beans and add them to the pan along with the fresh water. Add the chipotles or chilli flakes and the tomato purée Increase the heat to medium-high - Let it bubble for 3-5 minutes, until thickened
Step 3
Toast the seeds - Put the frying pan on a medium-high heat. Once the pan is hot, scatter over a handful of pumpkin and/or sunflower seeds. Toast until browned and the seeds smell good. Take off the heat and set aside
Step 4
Make the salsa Roughly chop the cherry tomatoes, spring onions and red chilli and put them in a bowl. Add the red wine vinegar and salt, and squeeze in the juice of the lime Saving a handful of leaves for garnish, roughly chop the coriander leaves and stems and add them to the bowl. Stir to combine
Step 5
Finish the mole Roughly chop the dark chocolate. Add it to the pan and stir until melted Squeeze in the juice of the orange -Season with smoked salt and stir through.
Step 6
Serve Spoon the mole into deep bowls Top with the salsa. toasted seeds and coriander leaves. Serve with tortillas or rice on the side
