VEGAN MEDITERRANEAN PASTA SALAD
A good pasta salad without meat 🍖
***NOTE***
I use 8 oz. jar Dellalo bruschetta tomatoes. You could easily make your own as well.

Ingredients
8 servings

1 lbwhole wheat penne pasta
or regular, cooked, drained

8 ouncesbruschetta tomatoes

4 tablespoonssugar-free marinara sauce

6 ozkalamata olives
or black, sliced

2 teaspoonitalian seasoning

½ teaspoonred chili flakes

2 Tbspnutritional yeast

2.5 ozimitation bacon bits

1red onion
diced

8 ozpepperoncini
sliced

1 teaspoongolden monkfruit sweetener
Instructions
Step 1
Cook pasta, rinse, drain. Allow to cool down on counter, but don't cool in fridge. Add ingredients and mix to incorporate. Store in fridge before serving.
