VEGAN MEDITERRANEAN PASTA SALAD
A good pasta salad without meat 🍖
***NOTE***
I use 8 oz. jar Dellalo bruschetta tomatoes. You could easily make your own as well.

Ingredients
8 servings
1 lbpenne pasta
cooked, use whole wheat
8 ozbruschetta tomatoes
4 tablespoonssugar free Marinara sauce
1 cupkalamata olives
sliced
2 teaspoonitalian seasoning
1 teaspoongolden monkfruit sweetener
½ teaspoonred chili flakes
2 Tbspnutritional yeast
2.5 ozimitation bacon bits
1red onion
diced
16 ozbanana peppers
chopped, drained pepperconia
Instructions
Step 1
Cook pasta, rinse, drain. Allow to cool down on counter, but don't cool in fridge. Add ingredients and mix to incorporate. Store in fridge before serving.
