ROASTED PEPPER QUESADILLAS

It's easy to roast a few peppers in the oven, but a jar of pre-roasted peppers is really useful to have in the storecupboard if you're in a rush or can't get to the shops, so feel free to sub those in.

Step 1
Preheat your oven to 180°C/gas mark 4.

Grab a roasting tin, throw in the onions and peppers, drizzle with olive oil, add the cumin and paprika, season, then mix everything together to coat evenly. Roast for 15 minutes.
Step 3
Lay a tortilla wrap in a dry frying pan and spread a quarter of the pepper and onion mixture on top, then add a quarter of the grated Cheddar and place another wrap on top. Cook over a medium heat for a few minutes, then carefully invert the quesadilla onto a plate and then slide it back into the frying pan. Cook the second side for a few minutes until the cheese is melted, and it's done. Repeat to make 3 more quesadillas. Cut them into quarters and serve.
