Ingredients
4 servings
Bhajis
3onions
large, sliced
1 Tbspginger
minced
1 handfulcoriander
chopped
1green chilli
finely chopped
1 tspground cumin
1 tspPaprika
1 tspturmeric
1 tspchilli flakes
1 tspcurry powder
1 tspsalt
1 ½ cupsgram flour
also known as chickpea flour
1 Tbspcornflour
½ tspbicarbonate of soda
baking soda
½ cupwater
Cucumber Raita
Instructions
Step 1
Begin with grating the cucumber and finely chopping the mint.
Step 2
Place in a bowl and add the yoghurt, cumin and salt. Mix well and leave in the fridge.
Step 3
Thinly slice the onions and finely chop the coriander, chilli and ginger.
Step 4
Place in a large mixing bowl and add the spices, gram flour, corn starch and bicarbonate of soda. Slowly add the water, whilst stirring until the onions become thick and stodgy.
Step 5
Get a deep pan on a medium-high heat. Add 2-3 inches of oil (canola, vegetable etc) and bring up to 170c/340f.
Step 6
Scoop the onion mixture with a tablespoon and shape evenly into a ball. Place into the oil and turn only once whilst cooking. Once they a dark golden brown they're ready to go.
Step 7
Serve with the Raita and enjoy!
