Step 1
Cook the rice in a saucepan by covering with water and bring it to the boil. Add a bit of salt and coconut oil for flavour. Stir frequently to avoid sticking. When cooked put it aside and keep warm.
Step 2
In a wok stir fry the onions until soft, then add the other vegetables one by one keeping them separate in the pan.
Step 3
Meanwhile put a pan of water on the stove. When boiled, lower the eggs into the water and allow them to boil for 3-4 minutes.
Step 4
When all the ingredients are ready put the rice into a bowl and arrange the vegetables on top. Peel the egg and place it in top of the rice, breaking it open to let out the yolk. Serve straight away.
