400mlcan coconut milk

4fresh kaffir lime leaves

1cinnamon stick

1 Tbspsoft light brown sugar
or palm sugar

2 tsptamarind paste
or freshly squeezed juice of 1 lime

2 Tbspdark soy sauce

2 tspflaked sea salt
plus extra to season
