Ingredients
2 servings
2nests egg noodles
1 Tbspvegetable oil
1tomato
large, sliced
1green chilli
sliced
1 knobginger
finely diced
2garlic cloves
minced
1red onion
finely sliced
½ tspchilli powder
½ tspcumin powder
¼ tspturmeric powder
½ tspgaram masala
curry powder, or general medium curry powder if you don't have garam masala
500mlvegetable stock
I used 1 tbsp Yondu Umami Seasoning with 500ml water
2carrots
julienned
0.5red pepper
julienned
0.5yellow pepper
julienned
3 Tbspfrozen peas
½ tspsea salt
1 tspsoy sauce
½ tspblack pepper
1spring onion
sliced
coriander
lemon
squirted over the top
Instructions
Step 1
Before beginning your broth, make sure your egg noodles are cooked to package instructions. Set them aside until your broth is ready.
Step 2
Place a wok or frying pan on high heat. Add in your tbsp of vegetable oil, follower by your garlic, ginger, green chilli, tomato, and red onion. Give it a good fry for 2 minutes, stir frequently to avoid burning.
Step 3
Then, add in all of your spices. Give it another stir.
Step 4
Pour in your vegetable stock, followed by your vegetables of choice and the soy sauce, salt, black pepper, and spring onion. Taste your broth and add in more spice/seasonings based on your preference.
Step 5
Prepare your serving bowls by adding in your noodles, followed by the Thukpa broth and veggies. Top with coriander and a squeeze of lemon, enjoy!
