Instructions
Step 1
Preheat the oven to 180C. Mix the okra, mushrooms, lemongrass, lime leaves and salt with the oil in a roasting tin and then transfer to the oven and roast for 15min.
Step 2
Mix together the garlic, ginger, Tom yum paste, coconut milk and water. Add to the veg with the tofu for a further 15mins.
Step 3
Taste and season with soy sauce, scatter over the red chilli and spring onion.
