This might be my favourite breakfast for busy weeks! It tastes amazing, it’s fresh and creamy, and the addition of silken tofu really up the protein content, making you feel full and satisfied for longer. It’s also packed with omega-3s and fibre. It’s a great way to include more pineapple into your diet. Pineapple is rich in Vitamin C and polyphenols. It also contains a digestive enzyme called bromelain, which helps break down protein and is a great food to include for gut health.

Instructions
Step 1
To a blender, add 2 cups of pineapple, silken tofu, coconut milk, and maple syrup.
Step 2
Divide the chia seeds into 4 jars and add the liquid. Stir well to make sure it is thoroughly combined. Place in the fridge to set for at least 2 hours.
Step 3
Top up with yogurt and pineapple puree (simply blend the pineapple) or pineapple chunks and coconut flakes. Enjoy!
