Ahi Tuna Tacos

Seared ahi tuna that is crusted with a roasted kelp powder for maximum umami. Paired with a mango salsa and Chinsu-mayo, your taste buds will be going for a ride. This recipe makes about 9 tacos.

Ingredients

Mango Salsa

1mango
diced

2 Tbspcilantro
chopped

1shallot
finely diced

1tomato
diced

1jalapeno
diced

1 Tbsplime juice

1 tsplime zest

salt
to taste
Chinsu Mayo
Instructions
Mango Salsa
Step 1
Dice a mango, chop cilantro, shallots, tomatoes, and jalapeno. Combine with lime juice, lime zest, and salt to taste.
Chinsu Mayo

Mix Chinsu hot sauce and mayonnaise until combined.
Sear Tuna
Step 3
Combine roasted kelp (kombu) powder and salt. Brush tuna with egg white and coat the tuna in the kelp powder.




Step 4
Heat a pan over medium heat and add a tiny bit of oil. Sear tuna on each side for about 15-30 seconds. Remove and let cool to room temp before slicing.
Step 5
Slice tuna into thin strips.

Heat up corn tortillas and assemble with chinsu mayo, sliced tuna, and mango salsa.
