Steak fajita quesadilla

This recipe is one I did because I was craving a quesadilla but didn't feel like going to a restaurant for it! So I decided to make it for lunch at home and it was a hit! This recipe can make about 3 to 4 quesadillas. Try it out!

seasoning spices

1 ½ tspsalt

1 tsppepper

½ tspcumin

1 tspdried oregano

1 tsponion powder

1 tspgarlic powder

½ tsppaprika

¼ tspcayenne

Step 1
Chop veggies into bite sized pieces and set aside.
Step 2
Combine all dry seasoning and mix well.
Step 3
Season steak on both sides leaving 1 tsp or so of seasoning for later.
Step 4
Add 1 tbsp olive oil to a pan and heat to medium/high.
Step 5
Cook steak about 4 to 5 minutes on each side until a brown crust forms then set aside to rest.
Step 6
Turn down heat to medium and add veggies and remaining seasoning. Cook until veggies have softened and remove from pan. While veggies are cooling slice steak into slices or bite size pieces.
Step 7
In a clean pan on medium heat spray with olive oil and lay down tortilla. On one half of the tortilla layer some of the veggies , steak pieces and cheese. Fold over other half of tortilla and press lightly. Cook for 2 to 3 min on each side or until crispy and golden brown.
Step 8
Remove from pan and place on cutting board. Slice into 3 to 4 slices and serve with salsa, guacamole or sauce of your choice! Enjoy!
