Ingredients

pistachios
crushed

1 Tbred wine
or apple cider vinegar

8 clovesgarlic

3tomatos
plum or roma, 2 quartered, 1 diced

1fennel bulb
wedged

1lemon
wedged
6apricots can
wedged

6chicken thighs
or 4 chicken legs

3 Tbolive oil

2 Tbhoney

1 Tbfresh ginger
grated

1 tscinnamon

0.5 Tbtumeric

1 Tbpaprika

1 tsblack pepper

1.5 tscoriander

1 tspcumin

2 tspsalt
Instructions
Step 1
1. Heat oven to 350f
Step 2
2. Mix spices together with honey and 2Tb olive oil, separate into to halves and use the first half to create a rub for the chicken. Cut slits into thighs and insert garlic, leave out to sit while you cut the veggies.
Step 3
3. Assemble fennel, tomato, lemon, and apricots on the bottom of an oven-safe dish. Place thighs on top.
Step 4
4. Mix together remaining spice rub with 1Tb olive oil 1Tb vinegar, and 2Tb water. Drizzle over the whole dish.
Step 5
5. Cook for 50m in the oven, then top with pistatchios and cook and additional 15m before serving.
