Spinach Artichoke Stew
Like spinach artichoke dip, but for dinner!

Ingredients
6 servings

1yellow onion
large, finely chopped

1kosher salt

black pepper

3celery stalks
chopped

8garlic cloves
smashed and chopped

2 poundsbonless skinless chicken thighs

1 cupchicken stock

½ cupwhite wine

1 tablespoonlemon juice

1 teaspoonred pepper flakes

10 ozspinach
chopped

1 x 12 ozmarinated artichoke hearts
drained

1cream cheese

½ cupfresh dill
finely chopped

1 x 4scallions
thinly sliced, for topping

1parmesan cheese
grated, for topping
Instructions
Step 1
Place chicken in slow cooker and add onion, celery, salt, red pepper flakes and garlic. Combine chicken stock, white wine, and lemon juice and pour over chicken. Cook on low 6-8 hours.
Step 2
About 20-30 minutes before serving, shred chicken with forks, then stir in spinach, artichoke hearts, cubed cream cheese, and fresh dill. Allow cheese to melt
Step 3
Top stew with scallions and parmesan cheese to serve.
