Instructions

Step 1
To a pot add coconut/olive oil with the red onion, garlic, spices and cook down for a couple of minutes. Now add the peanut butter and tomato puree and stir. Add the tinned tomatoes, coconut milk, chickpeas, sweet potato, veg stock and season with a pinch of salt and pepper. Bring to a boil and reduce to a low/medium heat for 15 minutes until it thickens and the sweet potato softens. Tip: Serve with coconut rice
