A traditional Parsi breakfast dish, just the way my mother makes it!

Instructions
Step 1
On medium-low heat, sauté onions until translucent, with only a little brown. (This will require letting the onions sit occasionally.)

Step 2
Reduce to low heat, and add ginger-garlic paste.

Step 3
Add spices and sauté more.



Parsi sambhar masala¾ tsp
Step 4
Add tomatoes and chilli peppers, and sauté more.


Step 5
Add Worcestershire sauce.

Step 6
Add eggs and beat in pan. If the pan is too hot, consider removing from heat first so that the eggs don’t cook before you can beat them.

Step 7
Add cilantro and stir throughout the eggs.

Step 8
Serve with fresh toast or roti.
