Step 1
Make the overnight oats by stirring everything together in a big bowl - taste test and add more maple or lemon to vour taste - then cover and leave to set for 2 hours (or overnight).
Step 2
Make the chia jam by adding the blueberries to a pan over a low heat, along with the lemon juice and maple syrup. Squish the blueberries down with a masher or back if a fork. Let it simmer for 5-10 minutes until the juices have released and it's gone a rich purple colour.
Step 3
Take off the heat and stir in the chia seeds and let it set into a thicker jam texture. You can store this in a jar in the fridge for upto a week.
