SNEAKY ROAST VEGGIE PASTA
Feels like a naughty pasta but really it’s packed full of veggies and tastes damn good!!! Best thing to do if you don’t know what to do with the leftover veggies in your fridge 😇

✍️ INGREDIENTS
• 375g
protein pasta (can use other pasta)
• 600g chicken (raw weight)
• 4 roma tomatoes
• 1 zucchini
• 4 carrots
• 1 brown onion
• 1 garlic bulb
• capsicum - I used green
• 150ml milk or cream (I used oat milk)
• parmesan cheese
• 15g extra virgin olive oil
•
garlic and herb seasoning
• oregano
• Basil
• S&P
• pasta water - reserve as much as you want and pour it into the sauce little bits at a time until you reach the consistency you like
👩🍳 METHOD
• preheat oven to 180 degrees
• cut up your veggies and pop on a lined baking tray, cover with olive oil, S&P and garlic&herb seasoning. Bake for 40-45 mins (check them half way through)
• while that’s cookin away, cook pasta as packet direction
• season chicken with S&P and cook
• once veggies are done, pop into a blender or food processor and blend until all combined. Add in milk, pasta water (as much as you want until it reaches your desired consistency) and seasonings to taste - oregano, garlic & herb, basil
• put the pasta and chicken in a large dish then top with sauce. Sprinkle over parmesan and serve 😋
