Instructions

Step 1
-Cut bacon into large bite sized pieces -Trim chicken and cut breasts in half IF they are really big and thick -Season the chicken heavily, on both sides with Emeril's Essence spice blend. -Peel onion and dice -Core apples, then slice, thinly and sprinkle with lemon juice, stir until all are coated -Pick leaves from Thyme and chop -Trim Chives and chop -Heat a saucepan over medium-high heat -Add butter-per rice box directions- and melt -Add 1/2 wine 1/2 , instead of water-per rice box directions- stir -Add rice and stir, bring to a boil, and then reduce heat, cover and simmer-per rice box directions. (Simmer until rice is tender. If all the liquid is gone and the rice is crunchy, add some water and cook longer, repeat until tender.) Hold warm until serving -Heat a large pot over medium-high heat -Add bacon and cook, stirring occasionally until crisp -Remove bacon to paper towels to drain, hold for garnish -Drain off the rendered bacon grease, until enough is left to coat pot well -Add the chicken to the hot bacon fat in the pot, cook over medium-high heat until golden brown on both sides and nearly cooked through, about 5 minutes per side. Remove chicken from the pot and cover to keep warm. -Add the onions and sauté, stirring occasionally, until caramelized and softened, sprinkle with salt and pepper. -Add the brandy to deglaze the pot. (This means add, then scrap the bottom of the pot with a spatula, until the pot is clear of browned bits) -Simmer until reduced by a third and the harsh smell of the brandy is gone. (If using all cider, add the extra cup at the same time as the rest of the cider) -Add the cider, bring to a boil and then simmer until reduced by a third. -Add the half and half, bring to a simmer, until reduced by a third. Do not over heat/heat too quickly, or the sauce will break. It will taste good and be fine to eat; it will just look clumpy. -Stir in the Thyme -Whisk the melted butter and corn starch together until smooth -Add to pot and whisk until well combined -Simmer until sauce is thickened
Step 2
Serve over rice with some sauce and apples
