Ingredients
8 servings
400gorange lentils
wash - leave to soak for 30 mins
2 Tbsgarlic
Chopped
salt
mustard seeds
1 TbsMustard powder
cinnamon sticks
1 TbsFenugreek seeds
Pandan leaves
green chillies
chilli powder
1 Tbscurry powder
Unroasted
1 TbsTurmeric
coconut milk
curry leaves
For the tempered onions
Instructions
Step 1
Break the cinnamon sticks into small slivers and add to the lentil pot
Step 2
Add the chopped garlic, 1 tbs of unroasted curry powder, lot of turmeric, fenugreek, mustard powder, pandan leaves, green chillies and curry leaves and mix well.
Step 3
Add oil to another pan and once it's hot, add the onions.
Step 4
Once the onions have coloured, add chillie flakes or dried chillies and some turmeric and a bit of chillie powder
Step 5
Once the mixture has tempered well add this mixture to the lentil pot
Step 6
Now add coconut milk and stir/mix well
Step 7
Set it on a high flame at the start and cover with a lid
Step 8
Within 5 to 6 minutes most of the liquid should have evaporated. Reduce the flame and add salt before closing the lid for the final few minutes
Step 9
Most of the liquid should have evaporated by now. You can sprinkle a dash of roasted curry powder on top.
Step 10
Let the dish sit for a little while before serving. If there's extra liquid this will evaporate now too.
