Instructions

Roast the tomatoes

Step 1
Drop the tomatoes inside the air fryer, drizzle with olive oil & sprinkle with coarse salt. Set the air frier to roast mode and roast for 5 minutes; toss them midway through the process. In the absence of an air fryer just you can roast them in a pan.

Prep the veggies

Step 2
Coarsely chop the spinach and mixed greens. You want to do this to prevent long strings of vegetables pulling in each bite.

Add olive oil and a dab of butter to a pan, once butter has melted drop the spinach and greens add a bit of coarse salt and cook them for 1 - 2 minutes. Set aside and keep warm
Step 4
Finely chop the basil leaves into strings and separate in half; one part goes into the egg mix and the other as topping.

Toast the bread

Heat a pan or griddle to 350 - 400 F

Generously drizzle olive oil on both sides of the slice of bread and season with the jalapeño & garlic rub. I use Heath Riles Authentic Garlic & Jalapeño rub, you can find it in Walmart or online.

Drop a couple of ounces of the butter and melt them on the pan

Toast both sides of the bread, be very careful not to over toast to prevent the seasoning from burning and turning bitter

Set aside and keep warm

Make the eggs

Preheat a pan with a bit of olive oil and 2 - 3 dabs of butter

Drop the eggs in a bowl, add salt to taste (NO pepper yet). Add the first half of the basil leaves and stir with a fork.

Drop the egg mixture in the preheated pan and stir them heavily using a spatula. Stir fast and constantly to cook the eggs evenly without any browning. This will only take between 3 - 4 minutes depending on desired doneness.

When eggs are setting, form the shape of the bread inside the cooking pan and cook them to desired doneness; this will allow a single piece of the scrambled eggs to be transferred to the bread. Rub some butter on top of the eggs to have it melt in the final phase of cooking. (Told you they had LOTS of butter)

Remove pan from heat and set aside, we don't want to eggs to overcook and start browning. The residual heat will keep them warm.

Assembly

Assemble toast in the following order

1. Cooked spinach and mixed greens

2. Scrambled eggs
Step 18
3. Roasted cherry tomatoes. (if they didn't burst during the roasting process, burst them now to prevent them from burning your mouth)

4. Drizzle the Mexican crema using whatever pattern suites you.

5. Top with the rest of the chopped basil and add freshly ground coarse pepper.
