Xmas Tofu Stir Fry

A healthy and vegan stir fry that can be made year-round, but with the colourful veggies I've used here it fits right in come Christmas time!

Ingredients
4 servings
For Tofu
For Stir Fry
2 Tbspsesame oil
3cloves garlic
minced
1 Tbspginger
minced
225ggreen beans
trimmed
1stalk celery
sliced
1 headbroccoli
small, cut into florets
1red capsicum
sliced
2spring onions
sliced
salt
to season
black pepper
For Sauce
Instructions
Cook Tofu
Step 1
Heat oil in a wok, then add tofu and let cook until golden on all sides, turning occasionally, about 7 to 8 minutes. Season with salt and pepper, and remove from wok to set aside.
Make Sauce
Step 2
In a small bowl, mix together the cornstarch and water until thickened. Mix in the remainder of the sauce ingredients until smooth and combined. Sauce will appropriately thicken once added to the wok.
Cook Stir Fry
Step 3
Heat oil in the wok, add in garlic and ginger and cook until fragrant, about 1 minute. Add in green beans, celery, broccoli, capsicum and white parts of the spring onions. Cook until all the veggies are tender, about 8 to 10 minutes, seasoning with salt and pepper.
Step 4
Return tofu to the wok, also adding in the sauce mixture, stirring thoroughly so that everything is coated in the sauce. Cook until the sauce thickens, about 2 minutes.
Step 5
Divide into bowls and serve garnished with the green parts of the spring onions.
