Instructions
Step 1
Preheat oven to 375°F.
Step 2
Cut off the tops of the bell peppers and remove the seeds and membranes.
Step 3
In a large bowl, mix together the quinoa, chickpeas, parsley, cilantro, mint, basil, dill, chives, scallions, arugula, spinach, kale, collard greens, mustard greens, beet greens, Swiss chard, bok choy, Napa cabbage, savoy cabbage, red cabbage, broccoli, cauliflower, and carrots.
Step 4
Stuff the bell peppers with the quinoa mixture and place them in a baking dish.
Step 5
In a small bowl, whisk together the tahini, lemon juice, water, cilantro, parsley, chives, scallions, basil, mint, dill, arugula, spinach, kale, collard greens, mustard greens, beet greens, Swiss chard, bok choy, Napa cabbage, savoy cabbage, red cabbage, and ginger.

Pour the sauce over the stuffed bell peppers.
