Kadhi Pakora, a popular South Asian dish. The recipe consists of deep fried pakoras (fried dumplings) dunked into the tangy and flavourful kadhi (a yogurt-based curry).It is usually eaten with chawal (rice) but also goes well with naan or roti.

Instructions

Step 1
1. In a large and deep pan, heat oil.

2. Add fenugreek seeds and cumin seeds. Let them splutter.
Step 3
3. Add green chillies, dried red chillies, chopped ginger, and garlic. Cook for a minute or until the ginger and garlic start changing color.

4. Add curry leaves and fry for a few seconds.

5. In a large bowl, add room temperature yogurt.
Step 6
6. Sift gram flour into the yogurt to break up any lumps.
Step 7
7. Add turmeric and gradually pour water. Mix well until you have a lump-free mixture.

8. Pour the mixture into the pan and stir continuously until the kadhi comes to a boil.

9. Add salt and chilli powder, and stir until combined.

10. Pour water, bring to a boil, and then reduce the heat to low-medium.

11. Let the kadhi cook for around 30-40 minutes, stirring occasionally.

1. While the kadhi is cooking, let's make the pakora.

2. Sift gram flour into a large bowl.

3. Add coriander, cumin, carom seeds, kasuri meethi, crushed chillies, salt, turmeric, cumin coriander powder, sliced onions, spinach, potatoes, coriander, green chillies, yogurt, and water.

4. Heat up oil in a deep pan.

5. Drop spoonfuls of the mixture into the hot oil and fry until golden brown.

6. Take out the fried pakoras and drop them into the kadhi.

1. Heat ghee in a small pan over medium heat.

2. Add cumin seeds, dried red chillies, and curry leaves.

3. Finally, add Kashmiri red chili powder and immediately turn off the heat.

4. Pour the tarka over the kadhi.
Step 22
Serve the Kadhi Pakora with rice or roti. Enjoy!
