Instructions
Step 1
Spray a pan (with a lid) well with some cooking spray then add in your chicken; allow to cook over a high heat for around 5 minutes then add in your fajita seasoning.
Step 2
Continue to cook for another couple of minutes then add in your rice, stir together then add in your stock, beans, salsa and sweetcorn; pop on a lid, reduce the heat to a simmer and allow to cook for 20 minutes.
Step 3
Once the rice is cooked and has absorbed all the liquid (if it’s a little fry before the rice is done just add a dash of water) sprinkle over the cheese and put the lid back on to melt.
