Miso glazed salmon with sesame pak choi
It’s a mid week winner and really quick to knock out! 🙌
Serves 2
Ingredients:
2 salmon fillets
Pak Choi
Sesame oil
1/2 red chilli
Sesame seeds
Coriander
Spring onion
Marinade:
1 tbsp white miso
1 tbsp soy
1 tbsp honey
1 tbsp mirin (not essential)
1 tsp sesame oil
1 tsp grated garlic
1 tsp grated ginger
Method:
1. Mix together the marinade ingredients and pour all over the salmon, ideally allow to sit for 15-30 mins but it can be cooked straight away.
2. In a non stick pan heat a little oil on a fairly low heat. Shake any excess marinade off the salmon and pan fry skin side down for about 3-4 mins then turn over and fry for another 3-4 mins. For thick fillets also cook on the sides. For the last couple of minutes pour the marinade into the pan and spoon over the salmon to glaze. Remove from the heat and allow to rest for a few mins.
2. For the Pak Choi, wipe the pan clean, heat a little sesame oil and on quite a high heat pan fry, allowing to brown a little. Once softened but still tender remove from the pan.
3. Top with chopped chilli, coriander, spring onion and sesame seeds.
