Ingredients
6 servings
For Chicken Marinade
For Satay Sauce
250mlcoconut milk
125mlwater
3 Tbsppeanut butter
1 Tbspsugar
2 tspsoy sauce
4 tsprice vinegar
1 tsphot sauce
optional
1 tspmild curry powder
1 tspground corriander
1 tspground cumin
½ tspsalt
¼ tspground white pepper
¼ tspground chilli
optional
For stir fry
2 tspavocado oil
to stop sticking
1red capsicum
1green capsicum
1Chilli
optional
1brown onion
3cloves garlic
1 stalklemongrass
grated
cashews
chopped
spring onions
coriander
Additional veggies (may need 1.5-2x sauce)
Instructions
Step 1
Place chicken, bi-carb, curry powder in a bowl, and mix together. Set aside.
Step 2
In a jug combine water and coconut milk, whisk in remaining sauce ingredients
Step 3
In wok, cook chicken until golden. Remove and set aside
Step 4
Cook capsicums (and any additional vegetables). Then add garlic, lemongrass, and onion. Cook until they begin to soften. Return chicken to wok
Step 5
Stir through satsy sauce and simmer for a few minutes
Step 6
Serve with rice and garnish with spring onions and coriander
