200 gramsChana Dal
600 milliliterswater
for cooking the dal
2 tablespoonsoil
or ghee
1 teaspooncumin seeds
1onion
medium, finely chopped
2tomatoes
medium, finely chopped
2 clovesgarlic
minced
2 centimetersginger
piece, minced
2green chilies
slit, optional
1 teaspoonturmeric powder
1 teaspooncumin powder
1 teaspooncoriander powder
½ teaspoonred chili powder
adjust to taste
1 teaspoongaram masala
salt
to taste

Instructions
Step 1
• Rinse the Chana Dal thoroughly under running water. Soak it in water for about 30 minutes, then drain.
Step 2
• In a pressure cooker, add the soaked Chana Dal and 600 milliliters of water. Cook for 3-4 whistles or until the dal is tender but not mushy. If you’re using a pot, cook until the dal is soft, which may take about 30-40 minutes. Set aside.
Step 3
• Heat oil or ghee in a pan over medium heat. Add cumin seeds and let them splutter.
Step 4
• Add chopped onions and sauté until they turn golden brown.
Step 5
• Add minced garlic, ginger, and green chilies, and sauté for a minute until fragrant.
Step 6
• Add chopped tomatoes and cook until they become soft and the oil starts to separate from the mixture.
Step 7
• Add turmeric powder, cumin powder, coriander powder, red chili powder, and salt. Mix well and cook for another minute.
Step 8
• Add the cooked Chana Dal to the pan along with its cooking water. If it looks too thick, you can add a little more water to achieve your desired consistency.
Step 9
• Simmer for 10-15 minutes, allowing the flavors to meld together. Stir occasionally.
Step 10
• Add garam masala and mix well. Cook for another 2-3 minutes.
Step 11
• Garnish with fresh chopped cilantro leaves.
Step 12
• Serve the Chana Dal Curry hot with rice or Indian bread (roti, naan). Squeeze a little lemon juice on top before eating for added zest.
