Satay chicken stir fry
A delicious Thai style satay chicken stir fry with plenty of vegetables and egg noodles, served in a peanut butter sauce

Ingredients
2 servings
300gchicken breast
diced
1courgette
diced
1red onion
chopped into chunks
Red pepper
chopped into chunks
Baby corn
chopped into chunks
2carrots
chopped into chunks
2garlic cloves
crushed
1red chilli
finely chopped
ginger
grated
2 padsnoodles
medium
Sauce
Instructions
Step 1
In a heated wok sprayed with low calorie oil, fry all the vegetables from above. When they are almost cooked add the diced chicken breasts
Step 2
Meanwhile soak the noodles in a bowl of boiled water for however long the instructions on the packet say (you can use other noodles so please follow the instructions if they differ to the soaked noodles)
Step 3
While everything is cooking mix together the peanut butter, soy sauce and sweet chilli sauce until it resembles a paste
Step 4
Drain the noodles and tip them into the wok with the other ingredients. Season with salt and pepper if desired
Step 5
Mix in the peanut butter mixture then serve
