Instructions
Step 1
Preheat oven to 350F
Step 2
Heat cast iron over medium heat and add 1 tbsp olive oil

While the oil is heating up, butterfly chicken breast
Step 4
Rub each chicken breast with the remaining tablespoon of olive oil and season with the salt, pepper, chili powder Italian seasoning, and paprika
Step 5
Place 2 slices of tomato, 2 slices of cheese, 2 Basil leaves on one side of the chicken breast, close breast with toothpicks.
Step 6
Sear each chicken breast for about 5 minutes per side, until golden brown
Step 7
Transfer to oven and cook until temperature reaches 165F, about 18 minutes
Step 8
Remove from oven and let rest 5 minutes
Step 9
Slice each breast into 1/4 inch slices, and drizzle balsamic glaze over the top, serve with your favorite salad
