Ingredients
4 servings

400gdried udon noodles

2onions
small, thinly sliced

2 clovesgarlic
peeled and grated

10gfresh ginger
peeled and grated

4spring onions
finely chopped

1red chillies
deseeded and thinly sliced

3 Tbsplight soy sauce

2 Tbsprunny honey

1 ½ Tbspchilli oil
crispy

450gchicken breast
diced

350graw peeled king prawns

½ Tbspgarlic granules

½ Tbsponion granules

½ Tbspsmoked paprika

½ Tbspgroundnut oil

1red chilli
deseeded and finely chopped

1spring onion

fresh coriander

Instructions
Step 1
In a bowl, mix together the chicken or prawns, garlic granules, onion granules and smoked paprika.

2. Bring a large saucepan of water to the boil and add the noodles.
Step 3
Cook according to the packet instructions, then drain and add to a large bowl of cold water to stop the cooking process. Set aside in the water while you cook everything else.

3. Heat the oil in a large, non-stick frying pan over a medium heat and add the chicken or prawns. For chicken, cook for

5-10 minutes until charred on the outside and cooked through, then remove from pan and set aside. For prawns, cook for

3-4 minutes until pink, then remove from the pan and set aside.

4. Reduce the heat and add the onion to the pan. Cook for 3-4 minutes until soft, then add the garlic, ginger, spring onions and chilli and cook for 2 minutes, stirring regularly.

5. Add the cooked noodles and chicken or prawns to the pan along with the soy sauce, honey and crispy chilli oil, then toss to combine.

6. Transfer to airtight containers and garnish with the chilli, spring onion, coriander and peanuts. Store in the fridge for up to 3 days.
