1. Add water, chicken, onion, garlic, turmeric, salt, and pepper to a 4- to 6-qt. pot. Bring to a boil over medium high heat. Reduce heat to medium and simmer, covered, about 20 minutes or until chicken is cooked through. Transfer chicken to a plate. 2. Rinse rice in a sieve to remove excess starch. Add rice and carrot to pot. Bring to a boil; reduce heat to medium-low and simmer, covered, until rice is tender, about 18 minutes. Meanwhile, shred chicken. 3. Fluff rice with a fork. Add
chicken and drizzle with lemon juice; stir gently to combine. Sprinkle with parsley.
