Slow cooker Cajun Coconut Rice and Kale Bowl

I had some red beans that I wanted to use and had a flavor profile in mind and started adding things to the crockpot. It’s healthy, easy, and delicious!

Instructions

Step 1
Soak your beans the night before. Add to crock pot with veggies, broth, bay leaves, and 2 tsp hot sauce 2 tsp Cajun seasoning. Cube chicken and sprinkle another teaspoon of Cajun seasoning and Louisiana hot sauce and coat thoroughly, add to crock pot. Set heat on high for 2-3 hrs, until beans are cooked through. 30 min before your crockpot is done rinse the rice and add to a pot with a lid. Add can of coconut milk and a little extra water, measure with finger. Bring to a boil, lid, and turn to low and cook 21 min. Then chop your kale in bite sized pieces and sprinkle half a lime’s juice and mix. Do this to get kale leaves tender while rice is cooking. Once everything is done ladle soup from crock pot in a bowl. Top with desired amount of kale, then as desired amount of rice. Top with more lime juice if desired.
