Ingredients

150gpasta
penne, fusilli, or spaghetti

150gboneless chicken
cut into bite-sized pieces

1red onion
small, sliced

2garlic cloves
minced

½ Tbspginger-garlic paste

1tomato
small, pureed or finely chopped

⅓ cupcoconut milk

3 Tbspyogurt
curd

½ Tbsptomato ketchup

½ tspchili flakes
adjust to spice level

¼ tsppaprika

¼ tspblack pepper

¼ tspgaram masala
optional

¼ tspturmeric

½ tspsoy sauce

1 Tbspoil
or butter

salt
to taste

Coriander
or spring onions for garnish
Instructions
Step 1
Boil pasta in salted water until al dente. Drain and set aside.
Step 2
In a bowl, mix chicken, 1 tbsp yogurt, turmeric, chili flakes, salt, and paprika. Let it sit for 10-15 minutes.
Step 3
Heat 1 tbsp oil or butter in a pan. Add marinated chicken and cook until golden brown and fully cooked. Remove and set aside.
Step 4
To prepare the sauce, in the same pan, sauté onions, garlic, and ginger-garlic paste until golden brown.
Step 5
Add tomato puree, soy sauce, ketchup, black pepper, and garam masala. Cook until oil separates.
Step 6
Lower the heat and stir in coconut milk and remaining yogurt. Mix well to make a creamy sauce.
Step 7
Add the cooked chicken and simmer for 2-3 minutes.
Step 8
Toss the cooked pasta into the sauce and mix well.
Step 9
Garnish with fresh coriander or spring onions.
