Sloppy Joes

2 tablespoonsvegetable oil

8cloves garlic
minced

2shallots
medium, thinly sliced

1 poundground pork

8 ouncescherry tomatoes
halved

0.5green bell pepper
diced

¼ cuptomato paste

2 tablespoonsfull-fat coconut milk

1 tablespoonsoy sauce

0.25 teaspooonred pepper flakes

½ teaspoonblack pepper

1 tablespoonlight brown sugar

Instructions
Step 1
Prepare the frozen french fries according to package instructions.
Step 2
In a wok or medium skillet, heat the oil over medium-high heat until shimmering hot. Add the garlic and shallots and cook, stirring often, until they're fragrant and softened (about 2 minutes). Add the ground pork and saute until mostly cooked, breaking the meat up with a spatula and stirring it around (2-3 minutes).
Step 3
Add the tomatoes and bell pepper and cook until the tomatoes soften and give up their liquid (2-3 minutes).
Step 4
Stir in the tomato paste, milk, soy sauce, red pepper flakes, pepper, and brown sugar. Continue cooking and stirring until a thick sauce starts to form (about 5 minutes). Remove from heat.
Step 5
Serve the pork mixture onto the potato buns, and top with fried onions and cilantro. Serve with french fries and salad.
