What a flavour explosion! Aloo chaat is a gorgeous Indian street food snack made with potatoes, sweet, sour and spicy chutneys and crunchy fried sev. There is a similar version
called chana chaat, which is made with chickpeas/garbanzo beans. I've combined the two here and switched up the pulses for nutty kala channa (black chickpeas) for a toothsome
delight. Nylon sev are deep-fried vermicelli noodles; if you can't find any, Bombay mix works too at a push.

Ingredients
4 servings

salt
for the cooking water

600gbaby potatoes
cut into quarters

400gblack chickpeas
kala chana, drained and rinsed

4 TbspGreen Chutney

2 Tbsptamarind chutney
store-bought

4 Tbspplain yogurt

2 tsplemon juice

¼ tspchilli powder

2 tspchaat masala

½ tspsalt

½ tspsugar

nylon sev
or Bombay mix

1red onion
small, finely chopped
Instructions
Step 1
Bring a large pan of salted water to the boil, add the potatoes and cook for
8-9 minutes, or until cooked through with a little bite remaining, then drain and refresh under cold running water until cold.




Step 2
Place the cold, cooked potatoes in a mixing bowl with all the other ingredients, except the sev and red onion, and give it a really good mix. Taste for seasoning, adjusting to your liking.











Step 3
Serve topped with the nylon sev and chopped red onion and enjoy.
