Instructions
Step 1
1. Cook bacon in a non-stick pan until crisp. Drain on absorbent paper and keep warm.
Step 2
2. Discard excess fat from pan. Return to medium-high heat, add 2 tbsp olive oil. Add mushrooms, season with salt and pepper, and cook 4–5 mins until golden.
Step 3
3. Add garlic, cook another 3–4 mins until mushrooms soften. Stir through coconut or oat cream (or stock) and simmer to reduce slightly.
Step 4
4. Meanwhile, steam or pan-fry asparagus 2 mins until just tender. Drizzle with olive oil, season.
Step 5
5. Toast bread, then top with bacon, asparagus, and mushrooms. Drizzle any remaining sauce over and serve.
