Tex-Mex Chicken Quesadillas with Light Queso Dip

Filling

1 cancanned chicken breast
or similar

1 x 12 ozcan corn
no sugar or salt, drained

1can mixed beans
no salt added

1 cupsalsa
or diced tomatoes with green chilies

2 Tbspnon-fat plain Greek yogurt

½ tspchili powder

¼ tspcumin
optional

Instructions
Step 1
In a skillet over medium heat, add chicken and stir-fry for several minutes to remove any excess moisture. Add corn, beans, salsa, Greek yogurt, and spices. Cook 5–7 minutes until heated through.
Step 2
Spread ~1/2 cup of filling and 2 tbsp (approximately) of shredded cheese (from the 1/2 cup total) on half of each tortilla. Fold over.
Step 3
Lightly oil or spray a skillet. Cook quesadillas 2–3 minutes per side until golden and cheese is melted. Slice into wedges.
Step 4
To make the queso dip: in a small saucepan over low heat, melt the Laughing Cow cheese with the salsa. Remove from heat and stir in Greek yogurt and spices until smooth. Thin with milk or water if needed.
Step 5
Serve warm with queso drizzle or dip. Garnish as desired.
